I am a sucker for meringue and making a Christmas themed one just feels right! Even for beginners, this recipe is fun and sure will make children smile… to be honest not only them but me, an adult, as well.
Here is the recipe:
Ingredients:
4 egg whites
pinch of salt
300 gr powdered sugar | 2 ½ cups
Red food coloring
*extract of your choice is optional*
How to make it:
1. Beat egg whites with a pinch of salt. When the egg whites start to get really white and fluffy, but yet have quite a way to go, gradually add the powdered sugar.
2. Beat the mixture for at least 10 minutes. Add any extract to get a flavor in if you want to.
3. When the meringue is stiff and forms sturdy peaks, take out about 1/3 of the meringue into a piping bag with a smaller tip than you’ll use for the hat part. This will be used for the brim and bobble of the hat.
4. Add the red food coloring in the remaining 2/3 of the meringue and continue mixing until you’re happy with the color.
5. Fill up the piping bag with the red meringue and set aside.
6. Prepare a baking tray with some baking paper and first pipe a circle with the white meringue for the brim of the hat. Add a big dollop of the red for the hat and finish it with a tiny bit of white right on the end of the red.
7. Dry these for about 50 minutes to an hour at 100 degrees Celsius / 210 Fahrenheit. Before you get them out of the oven, test it the meringues lift off without sticking to the baking paper. When they still stick a lot, you should keep them a few minutes longer.

Florentiner are really yummy and I realized that they are called Florentines in English just recently! Oh well, they still taste good and are fairly easy to make. So as promised here is the recipe:
Ingredients:
1 tablespoon butter
125 gr of heavy cream | ½ cup
50 gr sugar | ¼ cup
50 gr honey | 2,5 tablespoons
200 gr sliced almonds | 2 cups
2 tablespoons flour
Chocolate of your choice
How to make it:
1. Melt one tablespoon of butter and add the heavy cream, sugar, and honey to that. Boil this together until it gets a nice caramel-like color.
2. Add sliced almonds and continue cooking. The almonds will get roasted a bit.
3. After doing this for about 3 minutes, add the two tablespoons of flour into the pot. Now the mass should start to stick together even more. Continue cooking and stirring until it becomes one big clump of dough.
4. Get a baking tray with some parchment paper and get the whole dough onto that. Press the mass as thin as possible. If it gets too thin, it won’t hold together and if it is too thick, it will be too doughy on the inside.
5. Put this in the oven at a temperature you’re comfortable with. I had it at about 180 degrees Celsius/ 350 F. Bake it until the top gets all golden brown.
6. As soon as it is out of the oven, get this onto a cutting board and cut it into the desired shape while it is still hot!
7. Let them cool off on a cooling rack upside down and once it is cool you can spread some bittersweet chocolate (or the chocolate of your choice).
Note: *Instead of directly cutting the mass you can turn it upside down and spread the chocolate on and cut it after the chocolate has hardened. Try which technique works for you best.
*Of course, you can dip the cookies directly into the chocolate (or cover it completely).

I not only love the aesthetic of these cookies but always love that taste. It is to melt for! When I first made these I was half scared that the powdered sugar would just melt away but nope! It stays in place and looks and tastes amazing :D #recipe #cookie
Ingredients
120 gr flour | 1 cup
1 package backing powder
160 gr sugar | 3/4 cup
2 eggs
50 gr cacao | 1/2 cup
50 ml oil | 1/4 cup
a pinch of salt
a bit of vanilla extract
120 gr powdered sugar | 1 cup
How to make it
1. Pour the oil and the sugar in a bowl and mix it. Until the mixture becomes light.
2. Add one egg and beat that in. When it seems that it has become lighter, add the second egg.
3. Add vanilla extract and continue mixing.
4. Whisk together the flour, baking powder, salt, and cacao.
5. Gradually add the flour into the dough.
6. Scoop the dough onto a plastic wrap. Close it up tightly and toss it into the fridge until it gets firm. (I let mine rest until the next day but 1-2 hours should be enough)
7. When the dough is firm, unwrap it and roll them into small balls.
8. Then roll the dough balls in the powdered sugar and place them onto a baking sheet. Make sure you leave enough space in between as these will spread quite a bit.
9. Bake for 10 minutes at 180 degrees Celsius / 355 Fahrenheit.
10. Let them cool off a bit on the baking tray and then put them on to a cooling rack to let them cool off completely.
11. Enjoy munching them :D

Acuka is some kind of dip and spread for anything you want. I love it for breakfast and as a dip in general. You can buy this in almost every store here in Turkey but homemade is still the best! #spicy #recipe
Here is the easy-peasy recipe:
*Ingredients*
3 parts tomato paste
1 part spicy pepper paste/alternative
salt
cumin
loads of dried mint
oregano
some garlic
olive oil
Optional: walnuts, peanuts
*How to make it*
1. Add at least three to five tablespoons olive oil to a pan and roast the garlic for a bit. The roasting will make the garlic taste not as harsh but will still keep a certain flavor.
2. Add the tomato and pepper paste and roast it on low heat together with the garlic and start adding the spices.
3. Constantly taste the Acuka. Usually, it needs lots of mint so don’t be shy to add lots of it. Keep in mind that this will rest and change in flavor a bit.
4. If the consistency is too thin, stir a bit longer on low heat. If it is too thick, add a bit more olive oil.
5. Transfer the Acuka into a jar to cool off and store it in the fridge.
*Tips*
* Nuts are really popular in this. Walnuts complement this greatly! Hack them into small pieces and add them at the very end. I have a walnut allergy (and I like them so much…) so if I ever want to add nuts I use peanuts.

You don't know what to do for dinner but don't want to go out to get ingredients? Why not make this potato cake with basically all the ingredients you got at home. If you don't have something that is listed here... Don't add it or change it up. This is a vegetarian dinner but of course, you could toss in some bacon or alike ;) #recipe #yummy
*Ingredients*
6-7 big potatoes, chopped
1 onion
250 gr feta cheese | 9 oz
200 ml vegetable oil | 1 cup
100 ml milk | 1/2 cup
300 gr flour | 2 1/2 cup
1 package baking powder
250 gr yogurt | 9 oz
4 eggs
some dill (fresh or frozen)
pepper and salt
*How to make it*
1. Pour the yogurt, milk, oil, and eggs into a bowl and whisk it for a bit.
2. Add the grated onion and some dill it. Squeeze or chop feta cheese into the mixture.
3. Season generously (potatoes take lots of salt). Whisk again.
4. Put the baking powder into the flour and pour that into the mixture as well. At the very end fold in the potatoes until it is thoroughly mixed.
5. Put the mixture into a well-oiled baking pan and spread this so it is in an equal thickness.
6. Bake at 170 degrees Celsius / 340 Fahrenheit until the potatoes are soft. Check that by poking them with a toothpick.
*Tips*
* Add sesame seeds and/or shredded cheese on top before sending it off to the oven.
* None of the ingredients are set in stone. The potatoes here are raw but you can use leftover boiled potatoes as well.
* Spice it up with peppers, celery or leek! Chop them in small pieces and toss them in as well.

The disappointment of the last season... But before I knew that I celebrated the start of the season with this "bleeding cake"
SPOILERS: It's bleeding! But no worries: it is just sour cherries ;)

"Recipe" for the "blood":
250 gr sour cherries
100 gr sugar
1 teaspoon starch with a bit of water
Cook the cherries together with the sugar until the color slightly changes. Depending on how thick or thin you want your "blood" add the mixture of starch+water. Run through a blender so that the "blood" is all smooth.
The recipe for our sponge cake:
Ingredients
6 eggs (separated)
80 gr sugar | little less than 1/2 cup
180 gr sifted flour | 1 1/2 cup
1 teaspoon baking powder
4 tablespoons oil
How to make it
1. Start whisking egg whites until they start getting fluffier. Gradually add sugar while continuously mixing. Whisk until you get soft peaks.
2. Shortly whisk the egg yolks so that they get all smooth.
3. Add egg yolks to the egg whites and fold it in carefully.
4. Add flour and baking powder by sifting them gradually into the dough. Again fold in carefully.
5. In the meantime add the oil.
6. When all the ingredients are fully incorporated stop folding in!
7. Depending on the thickness of your cake you need to bake this at 180 C/355 F for at least 40 minutes (Mine was really thick so it took almost an hour to bake through completely).
8. Once the cake is out of the oven, let it cool off. For the best result, directly toss the cake into the freezer to be used the next day, or whenever you want.
Tips:
*I gotta say this again: The freezer option is the safest but of course you can just let it rest in room temperature.
*Want chocolate sponge cake? Remove 2 tbsp flour and add cacao. It tastes great!

This time I am not yet sharing the cake recipe, as I will do that in a separate video. You can, of course, use the one I used in my Baymax cake but I do not guarantee to look this good/even. The taste is great in both but here the looks matter as well.
