No Bake Mosaic Cake | Yummy chocolate treat for summer! And winter and always :D

Again a simple treat from my childhood. My auntie would always make it when we were craving for something sweet and it was fun to crush those biscuits! #recipe #nostalgia

Ingredients


500 gr petit beurre biscuits/graham crackers | 1 lbs

125 gr margarine/butter | ½ cup

370gr sugar | 1 ¾ cup

300 ml milk | 1 ½ cup

3 tablespoon cacao


How to make it 


1. Break the biscuits/crackers into smaller pieces, about the size of your thumb. 

2. Prepare pan or mold of choice and lay out with stretch film. 

3. Melt butter, add milk, sugar, cacao and let it cook for a few minutes. It should get a bit thicker (in the video I accidentally used a bit too much milk, that’s why it is so fluid still).

4. Add the chocolate mixture to the broken biscuits and mix it with a spoon/spatula (we don’t want you to burn). Let cool down to room temperature.

5. Put into pan and keep in the freezer for several hours.

6. Serve in thin slices. (Otherwise, it is hard to cut it anyway)


Tips


*Instead of a pan you can use a firm plastic bag and make it like a salami. It freezes faster that way.

*Feel free to mix up the recipe with nuts, chocolate chips or others. 

*Instead of milk you can use heavy cream which makes it … heavier :D But the taste changes significantly. If that sounds too heavy make half milk half heavy cream. 

*Before serving you can pour some molten chocolate over it.

This was my first video ever! Easy Tiramisu Recipe | No alcohol

Who can say no to this Italian dessert? Well, I can't and that's why we are sharing this easy and alcohol-free recipe. Details are down below here.


Ingredients

1 liter of milk | 4 cups | 6 water glasses

2 packages of lady fingers

400gr labne, cream cheese, Quark, mascarpone | 3,5 cups 

250gr sugar | 2,5 cups | 1,5 water glasses

ca. 100 gr flour | 3/4 cup | 6 tbsp

2 eggs

2 tbsp coffee + some water to dissolve it


How to make it

1. Brew the coffee and let it cool down

2. Boil the milk, add sugar and eggs, while constantly stirring it.

3. Gradually add flour. The milk should get creamier, if still too watery add another spoon of flour.

4. Add labne or alternatives, mix until dissolved, turn stove off.

5. Get tray of choice, dunk lady fingers in coffee for 1-2 seconds and put in tray. Lay ladyfinger on the whole surface.

6. Add a decent layer of the cooked crème. 

7. Add another layer of dipped ladyfingers.

8. Cover lady fingers with another layer of crème.

9. Let it cool off and put it in the fridge. Let rest for at least a night. 

10. Serve with cacao on top. 


Tips

* If your crème should get clumpy even after stirring so much (happens to the best) use your stick blender. If you don’t have a stick blender, you can keep it the clumpy way, as after resting you don’t feel the clumps anymore.

* Pure mascarpone can get really heavy, you can make a mixture of cream cheese and mascarpone or Quark or labne. Whatever you have at your disposal. 

* Don’t put cacao over the tiramisu if you don’t intend to serve it directly. The surface of the tiramisu is wet and nobody wants a wet cacao coat.

Russischer Zupfkuchen | Cheesecake with yummy chocolate dough, German style!

Ah! The cheesecake of my childhood. #cheesecake #recipe

Ingredients 


For the dough 

200 gr butter or margarine at room temperature | 7/8 cup

400 gr flour | 3 ¾ cup

100 gr sugar | 7/8 cup

40 gr cacao | 4 tablespoons

1 egg

1 package of baking powder


For the filling

1 kg labne, cream cheese or quark | 2.2 lbs

150 gr sugar | 1 cup

3 eggs

1 package of vanilla sugar

1 package of vanilla pudding / 2 tablespoons of starch

A few drops of lemon extract or lemon juice (of half a lemon should be enough)


How to make it 


1. For the dough but all the ingredients in a bowl and start kneading it until you have a pretty dark dough. The softer your butter is the easier it’ll be to knead. 

2. Get your pan of choice ready (I used a springform pan) and use about 2/3 of the dough and press it to a base of about half a centimeter / 0,2 inch. Make sure you put the dough onto the sides as well. 

3. To make the filling mix the eggs, sugar and vanilla sugar until the sugar has dissolved. Add the pudding powder or starch in and add the labne/cream cheese/quark. At the very end add the lemon extract/lemon juice. 

4. Pour the filling into the dough pressed pan and use the remaining dough to sprinkle or “pluck” onto it. 

5. Bake at 170 C / 320 F for about 30-45 minutes until the cheesecake filling takes on a golden brownish color.

6. Do NOT cut directly after taking out of the oven, best is to let it rest for a few hours. 


Tip 


* You can use the remainder of the dough to sprinkle it just over or even cut designs out to put onto the dough. Get creative!

* Don’t worry if your filling gets really runny. It actually tastes better when you bake it like that.

* Add some heavy cream to the filling if you want it to be creamier

Lentil Kofta | A yummy vegan snack!

They are yummy and filling aaand vegan. I love lentil kofte as they are a refreshing snack that everybody can enjoy. Like them spicy? Add a bit more pepper or even pepper paste. You should give it a try. #recipe #vegan

Ingredients

400gr lentils | 2 cups | 2 water glasses

1 liter water | 4 cups | 4 water glasses

170 gr “Köftelik Bulgur” | 1 ¾ cups | 1,5 water glasses


3 onions

2-3 tablespoons oil

3 tablespoons pepper flakes

some black pepper

2-3 tablespoons tomato paste


bundle parsley

7 pieces of green onions

some spicy peppers 


How to make it

1. Cook your lentils until done. 

2. Add “Köftelik Bulgur” to the cooked lentils, close the lid and let it rest. As the bulgur is thin the remaining moisture of the lentils will be enough for them.

3. Roast chopped onions with olive oil until they take some color. Add pepper flakes, black pepper, and other spices – don’t forget your salt.

4. Add 2 or 3 tablespoons of tomato paste. Mix thoroughly and cook it a bit.

5. Add the tomato paste-onion mixture to the lentils and mix it. 

6. Chop parsley, green onion, and spicy peppers.

7. Add them to the lentils and start kneading. 

8. If it seems still to dry and doesn’t take shape, add 2-3 tablespoons of olive oil. 

9. Form your kofte to your liking and enjoy with some lettuce.


Tips

*Instead of all tomato paste you can add a spoonful of pepper paste. It is quite spicy and adds an edge to the kofte.

Super Fluffy Marble Muffins | Easy recipe for ultimate fluffiness

One day an old colleague of mine brought these marble muffins to work and I was amazed by how fluffy they were. She happily shared the recipe with me and I am glad to share it with you here. #recipe #foodporn

Ingredients


3 eggs

250 gr sugar | 1 ½ cups | 1,5 water glasses

170 ml oil | 3/4 cup | 1 glass

300-350 gr flour | 3 glasses 

200 ml mineral/sparkly water | 1 glass

1 pkg of vanilla sugar

1 pkg of baking powder

2 tbsp of cacao


How to make it


1. Get your sugar and add the vanilla sugar to it. Add the eggs and whisk it until it gets fluffy and turns white-ish.

2. Add the oil and continue mixing.

3. Add the flour gradually, pour some mineral water if it gets too thick. Add the rest of the mineral water. You’ll have quite a runny dough now.

4. Separate the dough into two equal parts. Mix the cacao into one of the dough until thoroughly mixed.

5. Get your muffin tray (or just a cake pan) and add a teaspoon of the white and a teaspoon of the dark dough. Make sure that the dough has enough space to expand (fill the individual trays with about ¾ dough). 

6. Slightly stir the dough with a toothpick or any other thin object. 

7. Bake at 160-170 C / 320-340 F for about 15-20 minutes. Test with a toothpick if the dough is done. 


Tips


*You can separate the dough into more parts and add some food coloring to make this more fun! (super fluffy rainbow muffins are always a sight to behold!)

* If the white dough feels too plain, add some marmalade or fresh fruits. In that case, you should be careful that the fruit (like cherries) don’t drop to the bottom.

What I liked:

*It was easy to follow. 

*I liked that the ingredients were separated by sections (not all recipes have that, trust me). 

*While printing out I was able to print without pictures and save some paper!


What I didn’t like:

*As easy as it was to follow it complicated a relatively easy dough. 

*Redundant steps. 

*Waste of egg yolks! At least suggest that you can add it into the dough later/earlier on.

Super Moist Lemon Raspberry Muffins | The perfect pair of fruits in one place 🍋

My two favorite fruits, lemons and raspberries, together in a small very moist format. I mean who could say no? The only thing I didn’t like were the muffin papers… You should definitely give it a try. #recipe #cupcake

First the buttermilk substitute: 

Depending on how much buttermilk you need, add one or two tablespoons of white/clear vinegar and pour milk the amount you need. Let it rest for a minimum of 5 minutes. After that, you can use it in any baking recipe.


Ingredients


200 gr sugar | 1 cup

1 package vanilla sugar

110 gr berries of your choice | 4 oz. 

2 eggs

115 gr butter at room temperature | 1/2 cup

200 gr flour |1,5 cup

1 package of baking powder

the zest of one lemon

45 ml lemon juice | 3-4 tablespoons

120 ml buttermilk | 1/2 cup

a pinch of salt


How to make it


1. Cream the butter with the sugar and vanilla sugar until they become smooth. 

2. In the meantime add the baking powder and a pinch of salt to the flour and mix that a bit. 

3. When the butter and sugar are creamy, add the eggs individually. When the dough is smooth add the next egg etc.

4. Add the lemon zest and lemon juice. Don’t worry if your dough looks weird/clumpy.

5. Add the flour and buttermilk into the dough gradually until all is mixed thoroughly. The dough should have recovered its smoothness. 

6. At the very end add your berries into the dough. And mix them just a bit. If you stir them too much they’ll leak and the color of the dough will change. But if you want to have a marbled look, go for it.

7. Pour the dough into a muffin tray and off to the oven!

8. Bake at about 170 to 180 C / 340 to 355 F for 15 to 20 minutes, check with a toothpick if they are done. 


Tips


*Weirdly this fruity yummy-ness gets better in taste when you let it rest for at least 10 hours. The first time I made these I was super surprised. 

*Some kind of buttercream would go well with these.

How to make yummy moist coconut macaroons 🌴 | Easier than regular ones!

I used to be able to buy these in almost every shop in Germany and now I miss them… Time to DIY them! And this recipe is definitely easier than those regular macaroons (the whole letting it dry etc is not necessary here!) #recipe #foodporn

*Ingredients*

200 gr marzipan | 4/5 cup | 7 oz

150 gr shredded coconut | 2 cups

3 eggs, separated

120 gr powdered sugar | 1 cup

some vanilla extract

a pinch of salt


*How to make it*

1. Separate the eggs and beat that egg white until it is stiff

2. Add the shredded coconut and fold it carefully. If the coconut doesn’t get absorbed fully don’t worry about it.

3. Put the egg yolks and marzipan in a separate bowl and squish it until it is smooth. You can use a mixer if you want to.

4. If there are almost no pieces left, add the powdered sugar and continue mixing. Add a pinch of salt and a tiny bit of vanilla extract.

5. Add the egg-white-coconut-mix into the marzipan-mix and again fold it until it is thoroughly mixed. 6. Form the batter into walnut sized balls/pipe them on a baking sheet. 

7. Bake at 160 degrees Celsius | 320 Fahrenheit for about 15 to 20 minutes. They are dry out rather than bake. Be careful not to burn them.


*Tips*

* If your oven tends to burn anything even on this setting mentioned in the recipe, try to lower the heat a bit more and let it dry out longer.

* Dip or sprinkle some melted bittersweet chocolate onto the macaroons. They look and taste even better then.

How to make caramel-filled chocolate | Recipe for homemade caramel sauce 🍫

I was scared to try caramel but finally, I figured it out and it seems as easy as… Dunno something easy. But the caramel sauce alone would be boring so here is the caramel filled chocolate! #recipe #caramel

*Ingredients*

160 gr sugar | 3/4 cup

80 ml heavy cream |1/3 cup

70gr butter |1/3 cup

chocolate of your choice

some kind of mold


*How to make it*

1. Melt the sugar. 

2. Once the sugar is melted turn the stove off and add the butter. Stir it this until it is almost totally incorporated. 

3. Add the heavy cream into it and turn the stove on medium heat. 

4. Continue stirring until the caramel chunk melts completely. If you want to have a darker caramel (be careful not to burn it though) cook this a bit longer. 

5. Turn the stove off and let the sauce cool off.

6. Melt the chocolate on a double boiler and prepare the mold. Let it set.

7. Pour cooled off caramel sauce into the chocolate shell. Let it set even more.

8. Seal chocolate with a layer of melted chocolate and let it set again. 

9. Enjoy


*Tips*

* The caramel sauce is amazing with milk desserts or with coffee or anything else you fancy. 

* I used dark chocolate here but of course you can use milk or even white chocolate.

Detective Pikachu Cake | Yummy cake with chocolate ganache and bananas!

The recipe for our sponge cake:


Ingredients

6 eggs (separated)

80 gr sugar | little less than 1/2 cup

180 gr sifted flour | 1 1/2 cup

1 teaspoon baking powder 

4 tablespoons oil


How to make it 

1. Start whisking egg whites until they start getting fluffier. Gradually add sugar while continuously mixing. Whisk until you get soft peaks.

2. Shortly whisk the egg yolks so that they get all smooth. 

3. Add egg yolks to the egg whites and fold it in carefully. 

4. Add flour and baking powder by sifting them gradually into the dough. Again fold in carefully. 

5. In the meantime add the oil.

6. When all the ingredients are fully incorporated stop folding in! 

7. Depending on the thickness of your cake you need to bake this at 180 C/355 F for at least 40 minutes (Mine was really thick so it took almost an hour to bake through completely). 

8. Once the cake is out of the oven, let it cool off. For the best result, directly toss the cake into the freezer to be used the next day, or whenever you want. 


Tips:

*I gotta say this again: The freezer option is the safest but of course you can just let it rest in room temperature. 

*Want chocolate sponge cake? Remove 2 tbsp flour and add cacao. It tastes great!
